The Best Chocolate Peanut Butter Coconut Bites
Energy bites are my healthy snack of choice, and I have created many, many different kinds, but these Chocolate Peanut Butter Coconut Bites are definitely my favourite (I'm sure I've said that before, but there's always room for improvement, right?). Packed with protein, fibre and healthy fats, they are perfect as a pre- or post-workout snack, a mid-afternoon cure for the munchies, or even dessert. And, that chocolate peanut butter flavour...oh, so good!
1 1/2 cups oats
1/4 cup shredded coconut
1/2 cup all-natural peanut butter
1/3 cup honey (or maple syrup)
2 tbsp cacao powder
2 tbsp chia seeds
3 tbsp pumpkin seeds
Mix everything together in a large bowl until all ingredients are well blended. Roll into 1-inch balls (makes about 12-14), store in the refrigerator, and enjoy!
