Simple Quinoa Chicken Burgers

Homemade burgers are so quick and simple to make, and always taste so much better than frozen store-bought burgers. These Quinoa Chicken Burgers are a healthier, lighter alternative to your regular beef burgers, and pack a nutrient-dense punch filled with protein, fibre, B vitamins, iron, magnesium, potassium, zinc, manganese, phosphorous, selenium and copper.


Simply seasoned with cilantro, salt and pepper, these burgers come together quickly and can be on the table in less than 30 minutes. For additional flavours, try adding finely chopped onions, bell peppers, and red pepper flakes, or mix in some basil. pesto.



Ingredients:


500g lean ground chicken

1 1/2 cups cooked quinoa

1/4 cup feta, crumbled

1/4 cup fresh cilantro, chopped

Pinch of salt and pepper

Optional add-ins: finely chopped onion or bell peppers


Directions:


Cook the quinoa according to package directions.


In a large bowl, mix together the ground chicken, cooked quinoa, feta, cilantro, salt and pepper, and any optional add-ins, using your hands until well combined.


Scoop out about 1/2 cup of the mixture and roll into a ball and then gently flatten into a circular patty. Repeat until all of the burger mixture is used up (makes about 5 to 6 patties).


Heat a large pan to medium and add 1 tbsp of olive or coconut oil to coat the pan. Place the patties in the pan and cook for approximately 5 minutes per side until lightly browned on each side and cooked through.


Serve the burgers on regular buns, lettuce "buns", or on a bed of greens, and top with your favourite burger toppings.


Enjoy the burgers immediately, keep in the fridge for up to 3 to 4 days, or store in the freezer for up to 2 to 3 months.
